Makes : 5 parcels
Ingredients : ( 1 cup = 240 ml )
For stuffing :
- Boneless chicken - 400 grams
- Oil - 2 tbsp
- Onion - 2, medium sized, sliced
- Ginger garlic paste - 1 tsp
- Tomato - 1/4 cup, chopped
- Red chilli powder - 1 tsp
- Coriander powder - 1/2 tsp
- Garam masala - 1/4 tsp
- Pepper powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Salt - to taste
- Coriander leaves - few
For crepes / Dosa :
- All purpose flour / Maida - 1 and 1/2 cups
- Salt to taste
- Milk - 2 and 1/2 cups or as needed
- Oil - for brushing
For parcels/potalam :
- Eggs - 2
- Salt - to taste
- Pepper powder - 1/2 tsp
- Oil - for shallow frying
Method :
- Boil and shred the chicken pieces.
- Heat oil in a pan, add sliced onion, saute till its soft and translucent.
- Then add ginger garlic paste.
- Add tomato, cook till its soft and mushy.
- Add shredded chicken, chilli powder, coriander powder, pepper powder, garam masala, turmeric powder and salt.
- Mix well and cook for 5 minutes on low flame.
- Sprinkle coriander leaves and keep aside.
- Take all purpose flour / maida and salt.
- Pour milk and whisk well. Make as thin and runny batter.
- Heat a tawa/pan, make as thin dosa / crepes.
- Brush slight oil and cook on low flame till its done. Do not flip it.
- Transfer to a plate and keep aside. Continue with the remaining batter.
- Take one crepe, place some stuffing in the center.
- Fold the opposite sides, fold again and form as parcel. And continue with all.
- Take eggs, salt and pepper powder. Whisk well.
- Take one parcel dip in eggs and coat well.
- Gently drop in hot oil. Shallow fry till its slight golden brown in colour.
- Fry on both sides. Drain from oil.
- Serve hot.
