Serves : 4 persons
Ingredients : ( 1 cup = 240 ml )
- Gram flour / Besan atta - 1 cup
- Salt - 1/2 tsp
- Baking soda - 1/4 tsp
- Ginger and green chilli paste - 1 tsp ( Grind green chillies - 2 and ginger - 1 inch piece )
- Thick curd - 1/2 cup
- Water - as needed
- Eno fruit salt - 1 tbsp
- Coriander leaves - few
For tempering :
- Oil - 1 tbsp
- Mustard seeds - 1/2 tsp
- Cumin seeds - 1/4 tsp
- Green chilli - 1 ( finely chopped )
- Curry leaves - Few ( finely chopped )
- Sesame seeds - 1 tsp
- Water - 1/4 cup
- Sugar - 1 tbsp
Method :
- In a large bowl add gram flour, salt, baking soda, ginger and green chilli paste and curd.
- Now add water and mix well without any lumps and make as a thick batter in the form of idli batter consistency.
- Grease a baking pan with oil and keep it aside.
- Take a steamer add water and bring to boil.
- Finally add eno fruit salt. Mix well and pour in the greased pan immediately.
- And place over the steamer. Cover and steam for 15 mins.
- Insert the knife and check weather its done. The knife should comes out clean if its done.
- Gently flip and transfer it on a plate.
- Heat a pan add oil, mustard seeds and cumin seeds. Let them crackle.
- Add green chilli, curry leaves and sesame seeds. Fry for a minute.
- Then add water and sugar. Mix well and cook for 1 minute.
- Gently pour over the dhokla.
- Sprinkle coriander leaves.
- Cut and serve with mint chutney.
