Khaman Dhokla






Preparation time : 10 mins
Cooking time : 15 mins
Serves : 4 persons

Ingredients : ( 1 cup = 240 ml )

  • Gram flour / Besan atta - 1 cup
  • Salt - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Ginger and green chilli paste - 1 tsp ( Grind green chillies - 2 and ginger - 1 inch piece )
  • Thick curd - 1/2 cup
  • Water - as needed
  • Eno fruit salt - 1 tbsp
  • Coriander leaves - few


For tempering :
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/4 tsp
  • Green chilli - 1 ( finely chopped )
  • Curry leaves - Few ( finely chopped )
  • Sesame seeds - 1 tsp
  • Water - 1/4 cup
  • Sugar - 1 tbsp



Method :
  1. In a large bowl add gram flour, salt, baking soda, ginger and green chilli paste and curd. 
  2. Now add water and mix well without any lumps and make as a thick batter in the form of idli batter consistency.
  3. Grease a baking pan with oil and keep it aside.
  4. Take a steamer add water and bring to boil.
  5. Finally add eno fruit salt. Mix well and pour in the greased pan immediately.
  6. And place over the steamer. Cover and steam for 15 mins.
  7. Insert the knife and check weather its done. The knife should comes out clean if its done.
  8. Gently flip and transfer it on a plate.
  9. Heat a pan add oil, mustard seeds and cumin seeds. Let them crackle.
  10. Add green chilli, curry leaves and sesame seeds. Fry for a minute.
  11. Then add water and sugar. Mix well and cook for 1 minute.
  12. Gently pour over the dhokla.
  13. Sprinkle coriander leaves.
  14. Cut and serve with mint chutney.

Take gram flour in a large bowl

Add salt and baking soda

Add curd

Pour water and mix well without any lumps

Place on a steamer. Cover and steam for 15 mins

Insert a knife and check.

If the knife comes out clean then its done.

Heat oil in pan add mustard and cumin seeds. Let them crackle

Add green chilli and curry leaves

Add sesame seeds

Fry for a minute

Add water

And sugar

Mix well and cook for 1 minute

Gently pour over the dhokla

Garnish with coriander leaves

Cut and serve with mint chutney
