Makes : one 7 inch size cake tin
Ingredients : ( 1 cup = 240 ml )
- Unsalted butter - 1/4 cup
- Powdered sugar - 3/4 cup
- Rava / Semolina / Sooji - 3/4 cup
- Maida / All purpose flour - 1/4 cup
- Salt - a pinch
- Cardamom powder - 1/4 tsp
- Curd - 1/8 cup
- Milk - 1/2 cup + 1/2 cup
- Baking powder - 1/2 tsp
- Baking soda - 1/4 tsp
- Cashew-nuts - few chopped
- Tutti frutti - few ( optional )
Method :
- In a bowl, add melted butter and powdered sugar. Whisk till smooth and creamy.
- Add rava, maida, salt, cardamom powder, curd, milk as needed. Mix well till gets smooth and flowing consistency.
- Pour 1/4 cup milk on top and level it up. ( This step prevents the rava from drying )
- Allow it to soak for 30 minutes.
- Then add some milk, mix well and adjust to flowing consistency.
- Add baking powder, baking soda, cashew-nuts and tutti frutti combined well.
- Do not over mix at this stage.
- Pour on a lined baking tin. Tap 2-3 times to release air bubbles.
- Bake on a preheated oven in 180 degrees for 40 mins.
- Insert toothpick in the center. If it comes out clean then the cake is done.
- Cool, cut and serve.
Note :
- Adding cashew-nuts and tutti frutti is completely optional.
- You can add nuts of your choice.
- It has its shelf life for 3-4 days on room temperature.

|
Pour the batter |
|
Tap 2-3 times to release the air bubbles |

Bake on preheated oven in 180 degrees for 40 minutes |
|
Insert toothpick in the middle and check |
|
If it comes out clean then the cake is done |
|
Invert, cool |
|
Cut and serve |
