Rava cake / Eggless Semolina cake







Preparation time : 45 mins
Baking time : 40 mins
Makes : one 7 inch size cake tin 


Ingredients : ( 1 cup = 240 ml )
  • Unsalted butter - 1/4 cup
  • Powdered sugar - 3/4 cup
  • Rava / Semolina / Sooji - 3/4 cup
  • Maida / All purpose flour - 1/4 cup
  • Salt - a pinch
  • Cardamom powder - 1/4 tsp
  • Curd - 1/8 cup
  • Milk - 1/2 cup + 1/2 cup
  • Baking powder - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Cashew-nuts - few chopped
  • Tutti frutti - few ( optional )

Method : 
  1. In a bowl, add melted butter and powdered sugar. Whisk till smooth and creamy.
  2. Add rava, maida, salt, cardamom powder, curd, milk as needed. Mix well till gets smooth and flowing consistency. 
  3. Pour 1/4 cup milk on top and level it up. ( This step prevents the rava from drying )
  4. Allow it to soak for 30 minutes.
  5. Then add some milk, mix well and adjust to flowing consistency.
  6. Add baking powder, baking soda, cashew-nuts and tutti frutti combined well.
  7. Do not over mix at this stage.
  8. Pour on a lined baking tin. Tap 2-3 times to release air bubbles. 
  9. Bake on a preheated oven in 180 degrees for 40 mins.
  10. Insert toothpick in the center. If it comes out clean then the cake is done.
  11. Cool, cut and serve.

Note :
  • Adding cashew-nuts and tutti frutti is completely optional.
  • You can add nuts of your choice.
  • It has its shelf life for 3-4 days on room temperature.

Take melted butter in a bowl

Add powdered sugar 

Whisk well 

Till smooth and creamy 

Add rava 

Add maida 

Add salt 

Add cardamom powder 

Add curd 

Pour little milk 

Mix till it gets flowing consistency 

Pour 1/4 cup of milk on the top, level it up and set aside for 30 minutes

Mix well 

Add milk if needed and adjust the consistency 

Add baking powder and baking soda 

Add cashew-nuts 

Add tutti frutti 

Mix well 

Line a baking tin with parchment paper 

Pour the batter 

Tap 2-3 times to release the air bubbles 

Bake on preheated oven in 180 degrees for 40 minutes

Insert toothpick in the middle and check 

If it comes out clean then the cake is done 

Invert, cool 

Cut and serve
