Rava medu vada






Preparation time : 25 minutes
Cooking time : 20 minutes
Makes : 7 - 8 nos


Ingredients : ( 1 cup = 240 ml )
  • Rava / Semolina / Sooji - 1 cup
  • Thick curd / yogurt - 3/4 cup
  • Onion - 1/2 cup finely chopped
  • Ginger - 1 inch finely chopped
  • Green chilli - 3 -4 finely chopped
  • Curry leaves - few finely chopped
  • Coriander leaves - few finely chopped
  • Cumin seeds / Jeera - 1/4 tsp
  • Peppercorns - 1/2 tsp
  • Salt - to taste
  • Water - if needed
  • Oil - for deep frying 

Method :
  1. Take rava in a large bowl, add curd.
  2. Add onion, ginger, green chillies, curry leaves, coriander leaves, cumin seeds, peppercorns and salt.
  3. Mix well. Add water only if needed. The dough should be thick.
  4. Cover and set aside for 20 minutes.
  5. Now you can see that almost all the moist would have absorbed and become thick .
  6. Grease your palms and fingers with water.
  7. Take a large size of dough. Make a rough ball.
  8. Make hole in the center.
  9. Gently drop in hot oil. Fry on medium flame.
  10. Till it turns crispy and golden brown colour.
  11. Drain from oil. Transfer to a paper towel. 
  12. Serve hot with coconut chutney. 

Note :
  • Mostly, curd is itself enough for the dough consistency. If its too tight the sprinkle some water.
  • Resting time is mandatory.
  • Using sour curd will give extra taste and softness to the vada.

Take rava in a large bowl

Set aside for 20 minutes 

Now you can see that almost all the moist has absorbed and has become thick 

Take a large size of dough. Make a rough ball

Make hole in the center 

Gently drop in hot oil.
Fry on medium flame 

Fry till it turns crispy and golden in colour.
Drain from oil 

Transfer to a paper towel 

Serve hot with coconut chutney
