Makes : 7 - 8 nos
Ingredients : ( 1 cup = 240 ml )
- Rava / Semolina / Sooji - 1 cup
- Thick curd / yogurt - 3/4 cup
- Onion - 1/2 cup finely chopped
- Ginger - 1 inch finely chopped
- Green chilli - 3 -4 finely chopped
- Curry leaves - few finely chopped
- Coriander leaves - few finely chopped
- Cumin seeds / Jeera - 1/4 tsp
- Peppercorns - 1/2 tsp
- Salt - to taste
- Water - if needed
- Oil - for deep frying
Method :
- Take rava in a large bowl, add curd.
- Add onion, ginger, green chillies, curry leaves, coriander leaves, cumin seeds, peppercorns and salt.
- Mix well. Add water only if needed. The dough should be thick.
- Cover and set aside for 20 minutes.
- Now you can see that almost all the moist would have absorbed and become thick .
- Grease your palms and fingers with water.
- Take a large size of dough. Make a rough ball.
- Make hole in the center.
- Gently drop in hot oil. Fry on medium flame.
- Till it turns crispy and golden brown colour.
- Drain from oil. Transfer to a paper towel.
- Serve hot with coconut chutney.
Note :
- Mostly, curd is itself enough for the dough consistency. If its too tight the sprinkle some water.
- Resting time is mandatory.
- Using sour curd will give extra taste and softness to the vada.
