Ingredients : ( 1 cup = 240 ml )
Saffron colour / Spicy chicken tikka :
- Thick curd - 1/4 cup
- Ginger garlic paste - 1/2 tsp
- Cinnamon - 1 small stick
- Cardamom - 2 pods
- Cloves - 2
- Cumin seeds - 1/2 tsp
- Fennel seeds - 1/2 tsp
- Kashmiri red chilli powder - 1 tbsp
- Salt - to taste
- Onion - 1 small ( cubed )
- Boneless chicken - 5 cubes / 150 grams
White colour / Malai chicken tikka :
- Fresh cream - 1/4 cup
- Thick curd - 1/4 cup
- Pepper powder - 1 tsp
- Garam masala - 1/2 tsp
- Salt - to taste
- Lemon juice - few drops
- Ginger garlic paste - 1/2 tsp
- Boneless chicken - 5 cubes / 150 grams
Green colour / Haryali chicken tikka :
- Mint leaves - 1/2 cup
- Coriander leaves - 1/2 cup
- Ginger garlic paste - 1/2 tsp
- Green chillies - 3
- Lemon juice - few drops
- Salt - to taste
- Cumin powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Thick curd - 1/4 cup
- Boneless chicken - 5 cubes / 150 grams
Method :
Saffron colour / Spicy chicken tikka :
- In a mixer jar, add curd, ginger garlic paste, cinnamon, cardamom, cloves, cumin seeds, fennel seeds, kashmiri red chilli powder, salt, onion.
- Grind all together to a smooth paste.
- Take chicken cubes in a bowl.
- Add the masala paste. Mix well.
- Keep aside for 3 - 4 hours.
White colour / Malai chicken tikka :
- Take a bowl, add fresh cream, curd, pepper powder, garam masala, salt, lemon juice and ginger garlic paste.
- Mix well all together.
- Add chicken cubes. Mix well.
- Keep aside for 3 - 4 hours.
Green colour / Haryali chicken tikka :
- In a mixer jar, add mint leaves, coriander leaves, ginger garlic paste, green chillies, lemon juice, salt, cumin powder, garam masala, curd.
- Grind all together to a smooth paste.
- Take chicken cubes in a bowl.
- Add masala paste. Mix well.
- Keep aside for 3 - 4 hours.
Assembling and baking :
- Take 3 skewers insert the chicken pieces.
- Each colour in each skewers.
- Place on a baking tray.
- Bake for 30 - 40 minutes on grill mode.
- In 10 minutes interval take it out brush with oil or butter. Turn the side and grill again.
- Serve hot with mint chutney and sliced onion and lemon wedges.
Notes :
- Can use edible orange and green food colour to get bright colours.

Insert chicken cubes. Each colour in each skewers. Place on baking tray. Bake for 30-40 minutes on grill mode |

Serve hot with green chutney, onion rings and lemon wedges |
