Rice puttu / Arisi puttu






Preparation time : 15 mins
Cooking time : 10 mins
Serves : 2
Ingredients : ( 1 cup = 240 ml )

Rice flour - 1 and 1/2 cup
Salt - 1/2 tsp
Sugar - 1/2 tsp
Water - 3/4 cup
Grated coconut - 1 cup
Method :

1. Add rice flour, salt and sugar in a bowl mix well.
2. Sprinkle some water and crumble it. Repeat the same process till the flour becomes moist.
3. The moist flour should be like if we press it should hold its shape and if we break it should crumble.
4. Now take a large hole sieve and sieve the flour.
5. Now take the puttu maker place the dice.
6. Add 1 tbsp grated coconut followed by 6-7 tbsp of flour and again coconut and flour. Finally cover with coconut.
7. Now cover the mould and cook for 10 mins.
8. Remove the mould from flame.
9. Place it on a board and with the help of a skewer gently push from the bottom and remove from the mould.
10. Serve hot with curries.
Note :
* I have used pressure cooker puttu maker. For this add water in cooker cover the lid and place the mould where we keep the whistle and cook.
* You can use any type of puttu makers.
* Reason for seiving the flour is to avoid tiny lumps.
* You can just give a pulse in mixer grinder instead of sieving.

Take rice flour in a bowl

Add salt

Add sugar

Mix well

Sprinkle water

Crumble till the flour gets moist

The right consistency is, if hold the flour it should hold its shape.

If break it should crumble

Take a sieve 

Add the moist flour and start sieving 

Sieved flour is ready
 
Take puttu maker

Place the dice

Add 1 tbsp grated coconut

Followed by 6-7 tbsp of flour
 
Again add coconut

Followed by flour

Finally fill with coconut

Cover the lid

Add water in pressure cooker. Cover the lid.
 Place the puttu maker in the place of whistle hole.

Steam for 10 mins

Gently place the puttu maker on a board or a plate

Push from the bottom and remove the puttu

Serve hot
